Sauce

coconut aminos

mirin (omit for Whole30)

honey or a few drops stevia or for Whole30 use 2 tablespoons apple or pineapple puree or juice
Instructions
- Whisk together the coating ingredients in a small bowl and set aside.
- Whisk the egg whites until fluffy in a separate bowl and set aside.
- Mix together the sauce ingredients and set aside.
- Preheat a heavy bottomed skillet over medium heat.
- Prepare your assembly line: chicken, egg whites, coating.
- Add coconut oil to the preheated pan, swirling to coat.
- Dip chicken pieces in egg whites, then in the coating, and place in the hot pan without overcrowding.
- Brown the first side, then flip the chicken to crisp the other side, about 2-3 minutes per side.
- Once the chicken is cooked through, pour the sauce into the pan, stirring to release any bits.
- Let the sauce simmer for about a minute to reduce, then stir the chicken back into the sauce to coat evenly.
