Ingredients

The chicken

  • 12 pieces boneless skinless chicken thighs

The sauce

  • 1 cup light chicken stock
  • ½ cup raw honey
  • ¼ cup coconut aminos
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons unseasoned rice vinegar
  • 1 tablespoon fish sauce
  • 1 clove garlic, finely minced
  • 1 tablespoon grated ginger
  • ½ teaspoon chili pepper flakes
  • ½ teaspoon Himalayan salt
  • teaspoon ground white pepper
  • tablespoons tapioca starch
  • tablespoons water
  • 2 tablespoons toasted sesame seeds
  • to taste none chopped green onions (optional)

Instructions

  1. Whisk together all sauce ingredients in a large glass measuring cup.
  2. Mix tapioca starch and water to make a slurry.
  3. Cut chicken into bite-sized pieces.
  4. Heat oil in a large skillet over high heat.
  5. Cook half the chicken pieces undisturbed for about 2 minutes until golden, then flip and cook for another 1-2 minutes.
  6. Remove cooked chicken and repeat with remaining pieces.
  7. Return all chicken to the skillet and pour in the sauce.
  8. Lower heat and simmer uncovered for about 5 minutes.
  9. Stir in the slurry and cook for about a minute until the sauce thickens.
  10. Add toasted sesame seeds and mix well.
  11. Serve hot with rice and garnish with green onions if desired.
