Honey Sesame Chicken

Ingredients

The sauce

  • cup low-sodium chicken broth
  • ½ cup honey
  • 3 Tbsp soy sauce
  • 2 tsp toasted sesame oil
  • 1 tsp white vinegar
  • 3 Tbsp finely chopped yellow onion
  • 1 clove garlic, finely minced
  • 1 ½ tsp finely grated ginger
  • to taste salt and freshly ground black pepper
  • 1 cup + 1 ½ Tbsp cornstarch
  • 1 ½ Tbsp cold water

The chicken

  • 1 ½ lbs boneless skinless chicken breasts, cut into bite size pieces
  • 1 tsp baking powder
  • 2 large eggs
  • for frying Vegetable oil
  • 1 Tbsp sesame seeds
  • for garnish Chopped green onions (optional)

Instructions

  1. Combine all sauce ingredients except cornstarch and water in a saucepan and bring to a boil.
  2. Mix cornstarch and cold water in a bowl, then stir into the boiling sauce.
  3. Reduce heat and simmer the sauce until thickened.
  4. Heat vegetable oil in a pot to 350 degrees F.
  5. Whisk eggs in a bowl and mix cornstarch with baking powder in another bowl.
  6. Dip chicken pieces in eggs, then coat with cornstarch mixture.
  7. Fry chicken in batches until golden, then drain on paper towels.
  8. Toss fried chicken with sauce and sesame seeds, and serve warm over rice garnished with green onions.
