Ingredients

The Chicken

  • 1 ½ pounds boneless, skinless chicken thighs or breasts
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 3 tablespoons cornstarch

The Stir Fry

  • 2 tablespoons sesame oil
  • 1 tablespoon canola oil or grapeseed oil
  • 1 bunch scallions
  • 2 tablespoons minced fresh ginger
  • ¼ to ½ teaspoon red pepper flakes
  • 2 tablespoons minced garlic
  • 2 tablespoons sesame seeds
  • ½ cup chopped fresh basil or cilantro

The Sauce

  • ¼ cup low-sodium soy sauce
  • 3 tablespoons water
  • 2 tablespoons honey
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon cornstarch

Instructions

  1. Season the chicken with salt, pepper, and cornstarch in a bowl.
  2. Prepare the sauce by mixing soy sauce, honey, water, vinegar, and cornstarch.
  3. Heat a skillet or wok over high heat and add sesame and canola oil.
  4. Stir-fry the green onions, ginger, and red pepper flakes for a minute.
  5. Add garlic and stir for another 30 seconds.
  6. Add the chicken and cook until browned, then pour in the sauce.
  7. Simmer until the sauce thickens and the chicken is cooked through.
  8. Stir in sesame seeds and basil or cilantro before serving.
