Extra-Crispy Honey Sesame Chicken

Ingredients

The chicken

  • 1 lb boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tbsp sesame oil
  • ½ cup rice flour
  • 1 tsp sea salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder

The sauce

  • ½ cup coconut aminos
  • ¼ cup honey
  • 2 tbsp sesame seeds
  • 1 tbsp rice flour
  • 2 tbsp sesame oil

For serving

  • to taste rice or cauliflower rice
  • to taste additional sesame seeds (optional topping)
  • to taste sliced green onions (optional topping)

Instructions

  1. Cut chicken into bite-sized pieces and set aside.
  2. Combine rice flour, salt, pepper, garlic powder, and onion powder in a zip-top bag and mix.
  3. Add the chicken pieces to the bag and coat them with the flour mixture.
  4. In a saucepan, mix all sauce ingredients and heat over medium heat until hot, then reduce to a low simmer.
  5. Heat sesame oil in a skillet over medium-high heat and cook the chicken for 2-3 minutes on each side until golden brown.
  6. Once cooked, lower the heat and add the sauce to the chicken, tossing to coat.
  7. Remove from heat and serve.
