Instructions
- Make the sauce by blending all sauce ingredients until smooth and set aside.
- Mix tapioca starch, salt, and pepper in a bowl.
- Cut chicken thighs into 2 or 3 pieces and coat with the starch mixture.
- Heat coconut oil in a skillet over high heat.
- Cook chicken in batches for 3 to 5 minutes per side until golden and crispy.
- Return all chicken to the skillet, lower heat to medium, and cook for an additional 5 to 6 minutes.
- Add the sauce to the chicken and simmer for about 5 minutes until thickened.
- Serve immediately, garnished with green onions and orange zest if desired.
