Ingredients

The Chicken

  • 900 grams boneless skinless chicken thighs
  • ½ cup tapioca starch
  • ¾ tsp Himalayan salt
  • ¾ tsp freshly ground black pepper
  • ¼ cup coconut oil

The Sauce

  • ¾ cup freshly squeezed orange juice
  • ½ cup date paste
  • ½ cup coconut aminos
  • ¼ cup tomato paste
  • ¼ cup unseasoned rice vinegar
  • ¼ cup chopped fresh ginger
  • 1 tbsp toasted sesame oil
  • 1 tsp fish sauce
  • ½ tsp Himalayan salt
  • 2-4 pieces birds eye chili peppers
  • 1 clove garlic
  • Zest of 2 oranges grated orange zest

Optional Garnish

  • 2 tbsp sliced green onions
  • to taste pieces orange slices
  • to taste tbsp grated orange zest

Instructions

  1. Make the sauce by blending all sauce ingredients until smooth and set aside.
  2. Mix tapioca starch, salt, and pepper in a bowl.
  3. Cut chicken thighs into 2 or 3 pieces and coat with the starch mixture.
  4. Heat coconut oil in a skillet over high heat.
  5. Cook chicken in batches for 3 to 5 minutes per side until golden and crispy.
  6. Return all chicken to the skillet, lower heat to medium, and cook for an additional 5 to 6 minutes.
  7. Add the sauce to the chicken and simmer for about 5 minutes until thickened.
  8. Serve immediately, garnished with green onions and orange zest if desired.
