Asian Style Orange Glazed Chicken

Ingredients

The chicken

  • 1-2 tbsp extra-virgin olive oil
  • 12 pieces boneless skinless chicken thighs
  • generous sprinkle salt

The sauce

  • 1 cup fresh squeezed orange juice
  • the zest of 3 oranges orange zest
  • 1 cup light chicken stock
  • ½ cup pure maple syrup
  • ¼ cup coconut aminos
  • 2 tbsp unseasoned rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tbsp fish sauce
  • 1 tbsp sambal oelek
  • 1 clove garlic, finely minced
  • ½ tsp Himalayan salt
  • ½ tsp Chinese 5 spice
  • ½ tsp ground ginger
  • 2 tbsp tapioca starch
  • 2 tbsp water

Instructions

  1. Whisk together all the sauce ingredients in a large measuring cup.
  2. Heat olive oil in a skillet over high heat and season chicken with salt.
  3. Cook half the chicken pieces, golden side down, for about 2 minutes, then flip and cook for another minute or two.
  4. Remove cooked chicken and repeat with the remaining pieces.
  5. Return all chicken to the skillet and pour in the sauce, then simmer uncovered for about 10 minutes.
  6. Mix tapioca starch and water to create a slurry, then add to the skillet while whisking.
  7. Toss the chicken in the thickened sauce until fully coated.
  8. Serve immediately with rice and garnish with orange zest if desired.
