Asian Style Orange Glazed Chicken

Instructions
- Whisk together all the sauce ingredients in a large measuring cup.
- Heat olive oil in a skillet over high heat and season chicken with salt.
- Cook half the chicken pieces, golden side down, for about 2 minutes, then flip and cook for another minute or two.
- Remove cooked chicken and repeat with the remaining pieces.
- Return all chicken to the skillet and pour in the sauce, then simmer uncovered for about 10 minutes.
- Mix tapioca starch and water to create a slurry, then add to the skillet while whisking.
- Toss the chicken in the thickened sauce until fully coated.
- Serve immediately with rice and garnish with orange zest if desired.
