Paleo Orange Ginger Chicken

Instructions
- 1. Place the chicken in a large baking dish.
- 2. Whisk together the orange zest, orange juice, ume plum vinegar, ginger, garlic, and oil in a bowl and pour over the chicken.
- 3. Marinate the chicken in the fridge for 3 hours.
- 4. Bake the chicken at 350°F for 1 hour.
- 5. Turn off the oven and let the chicken sit in the oven for 30 minutes to set the juices.
- 6. Transfer the chicken to a platter and garnish with fresh orange slices before serving.
