Ingredients

The chicken

  • 1 whole chicken (2-3 pounds)

The marinade

  • 1 teaspoon orange zest
  • 1 cup orange juice
  • 1 tablespoon ume plum vinegar
  • 1 tablespoon ginger, fresh minced
  • 1 clove garlic, finely minced
  • 1 tablespoon grapeseed oil or olive oil
  • fresh orange (to garnish)

Instructions

  1. 1. Place the chicken in a large baking dish.
  2. 2. Whisk together the orange zest, orange juice, ume plum vinegar, ginger, garlic, and oil in a bowl and pour over the chicken.
  3. 3. Marinate the chicken in the fridge for 3 hours.
  4. 4. Bake the chicken at 350°F for 1 hour.
  5. 5. Turn off the oven and let the chicken sit in the oven for 30 minutes to set the juices.
  6. 6. Transfer the chicken to a platter and garnish with fresh orange slices before serving.
