Whole30 Sesame Chicken

Ingredients

The Chicken

  • 1 pound boneless skinless chicken breasts, cut into 1-inch chunks
  • to taste salt
  • ½ cup arrowroot starch
  • 1 large egg, whisked
  • as needed refined coconut oil or avocado oil, for frying

The Whole30 Sesame Sauce

  • 6 tablespoons coconut aminos
  • 2 tablespoons water
  • 1 tablespoon toasted sesame oil
  • ¼ cup dates, roughly chopped
  • 1 tablespoon rice vinegar
  • 1 teaspoon freshly grated ginger
  • 2 cloves garlic, peeled and roughly chopped
  • ½ tablespoon arrowroot starch
  • 1 tablespoon white sesame seeds

Optional Garnishes

  • white sesame seeds
  • green onions, sliced thin on a diagonal
  • cauliflower rice

Instructions

  1. Prepare a bowl with whisked egg and another with arrowroot starch.
  2. Season chicken pieces with salt, coat them in egg, then toss in arrowroot starch.
  3. Blend coconut aminos, water, sesame oil, dates, rice vinegar, ginger, garlic, and arrowroot starch until smooth, then stir in sesame seeds.
  4. Heat oil in a skillet, add chicken, and cook until golden brown on both sides.
  5. Pour the sesame sauce over the chicken, bring to a boil, and cook until thickened.
  6. Serve topped with sesame seeds and green onions over cauliflower rice.
