Ingredients

Filling

  • 4 cups cherries (about 1 lb., pitted)
  • ¼ cup maple syrup
  • 1 tbsp white whole wheat flour

Crust

  • 4 ¼ cups white whole wheat flour
  • 1 cup softened coconut oil
  • 2 tsps salt
  • 2 tbsp maple syrup
  • 1 cup cold water

Instructions

  1. Simmer cherries and maple syrup in a medium pot for 12-15 minutes until tender, then stir in flour and cook for another minute.
  2. Preheat the oven to 375°F.
  3. In a food processor, mix crust ingredients except water, then slowly add water until the dough forms a ball.
  4. Roll out the dough on a floured surface to 1/8-inch thickness and cut into 24 rectangles.
  5. Place 12 rectangles on baking sheets, add filling, and cover with the remaining rectangles, pressing edges with a fork.
  6. Bake for about 20 minutes until lightly browned, then cool on a wire rack.
