Classic New York Cheesecake

Ingredients

Crust

  • 1 ½ cups graham cracker crumbs
  • cup unsalted butter

Filling

  • 4 packages cream cheese
  • 1 ¼ cups sugar
  • ½ cup sour cream
  • 2 teaspoons vanilla extract
  • 5 large eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon sea salt

Topping

  • ½ cup sour cream
  • 2 teaspoons sugar
  • 3 cups strawberries
  • ½ cup strawberry jelly

Instructions

  1. Preheat the oven to 475°F and prepare a water bath.
  2. Mix graham cracker crumbs with melted butter and press into the bottom and up the sides of a springform pan.
  3. Wrap the springform pan with foil and freeze the crust until ready.
  4. In a mixer, whip together cream cheese, sugar, sour cream, lemon juice, zest, and vanilla until smooth.
  5. Whisk the eggs separately and then add to the cream cheese mixture, mixing just until incorporated.
  6. Remove the crust from the freezer and pour in the cheesecake filling.
  7. Place the cheesecake in the preheated water bath and bake for 12 minutes at 475°F.
  8. Reduce the temperature to 350°F and continue baking until golden, about 50 to 60 minutes.
  9. Let the cheesecake cool on a wire rack.
  10. Combine sour cream and sugar for the topping and spread it over the cooled cheesecake.
  11. Refrigerate for at least 4 hours before serving.
  12. Prepare strawberries by cutting them in half and placing them on top of the cheesecake.
  13. Heat the strawberry jelly and brush it over the strawberries, then chill until ready to serve.
