Classic New York Cheesecake

Instructions
- Preheat the oven to 475°F and prepare a water bath.
- Mix graham cracker crumbs with melted butter and press into the bottom and up the sides of a springform pan.
- Wrap the springform pan with foil and freeze the crust until ready.
- In a mixer, whip together cream cheese, sugar, sour cream, lemon juice, zest, and vanilla until smooth.
- Whisk the eggs separately and then add to the cream cheese mixture, mixing just until incorporated.
- Remove the crust from the freezer and pour in the cheesecake filling.
- Place the cheesecake in the preheated water bath and bake for 12 minutes at 475°F.
- Reduce the temperature to 350°F and continue baking until golden, about 50 to 60 minutes.
- Let the cheesecake cool on a wire rack.
- Combine sour cream and sugar for the topping and spread it over the cooled cheesecake.
- Refrigerate for at least 4 hours before serving.
- Prepare strawberries by cutting them in half and placing them on top of the cheesecake.
- Heat the strawberry jelly and brush it over the strawberries, then chill until ready to serve.
