Instant Pot Chicken Drumsticks and Rice

Instructions
- Rinse the rice until the water runs clear.
- Season the drumsticks with Cuban seasoning, salt, and pepper.
- Turn on the Instant Pot to the sauté function and add olive oil.
- Sear the drumsticks for a couple of minutes on each side.
- Add chicken broth to the pot and stir, then seal and cook on manual pressure for 22 minutes.
- Allow steam to release naturally for 10 minutes before releasing the remaining steam.
- Remove the chicken and drain the broth into a cup.
- Switch the Instant Pot back to sauté and add garlic and onions, cooking until fragrant.
- Deglaze the pot with some of the reserved broth.
- Add rice, water, additional seasoning, salt, and pepper, then seal and cook for 3 minutes on high pressure.
- Release steam naturally for 10 minutes, then release any remaining steam.
- Stir in red and green peppers and serve chicken over rice, garnished with parsley.
