Instant Pot Chicken Drumsticks and Rice

Ingredients

  • 5 pieces drumsticks
  • cups enriched long grain white rice
  • 1 tbsp olive oil
  • 1 cup low-sodium chicken broth
  • cups water
  • 1 cup onion, chopped
  • 2-3 cloves garlic, minced
  • to taste Cuban seasoning
  • to taste salt and pepper
  • ½ cup red peppers, chopped
  • ½ cup green peppers, chopped
  • 1 tsp parsley, chopped

Instructions

  1. Rinse the rice until the water runs clear.
  2. Season the drumsticks with Cuban seasoning, salt, and pepper.
  3. Turn on the Instant Pot to the sauté function and add olive oil.
  4. Sear the drumsticks for a couple of minutes on each side.
  5. Add chicken broth to the pot and stir, then seal and cook on manual pressure for 22 minutes.
  6. Allow steam to release naturally for 10 minutes before releasing the remaining steam.
  7. Remove the chicken and drain the broth into a cup.
  8. Switch the Instant Pot back to sauté and add garlic and onions, cooking until fragrant.
  9. Deglaze the pot with some of the reserved broth.
  10. Add rice, water, additional seasoning, salt, and pepper, then seal and cook for 3 minutes on high pressure.
  11. Release steam naturally for 10 minutes, then release any remaining steam.
  12. Stir in red and green peppers and serve chicken over rice, garnished with parsley.
