Easy Braised Tomatillo Chicken Drumsticks

Ingredients

The chicken

  • 6 pieces chicken drumsticks, skin removed

The marinade

  • 1 tbsp cider vinegar
  • 1 tsp kosher salt
  • tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp olive oil

The sauce

  • cups jarred tomatillo sauce
  • ¼ cup chopped cilantro, divided
  • 1 piece jalapeno, halved and seeded

Instructions

  1. 1. Season the chicken with vinegar, salt, pepper, and oregano. Marinate for a few hours if possible.
  2. 2. Set the Instant Pot to sauté, add oil, and brown the chicken on both sides for about 4 minutes each.
  3. 3. Add the tomatillo sauce, 2 tablespoons of cilantro, and jalapeno. Cover and cook on high pressure for 20 minutes.
  4. 4. Once the pressure releases, garnish with cilantro and serve over rice if desired.
  5. 5. For slow cooker, place all ingredients in the slow cooker and cook on low for 6 hours or high for 3 hours.
  6. 6. For stove top, follow the same directions, adding a little water, and cook covered on low for 30 to 40 minutes until tender.
