Instant Pot Latin Chicken Stew with Corn

Ingredients

  • 8 pieces skinless chicken drumsticks
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • 1 tablespoon olive oil
  • ½ medium onion, chopped
  • 3 pieces scallions, chopped
  • 1 piece plum tomato, diced
  • 1 clove garlic, crushed
  • ¼ cup chopped cilantro
  • 1 tablespoon cilantro for garnish
  • 8 oz can tomato sauce
  • 2 cups water
  • 1 tablespoon Chicken Better Than Bouillon
  • ½ teaspoon cumin
  • 2 pieces corn on the cob, husked and halved

Instructions

  1. Season the chicken with salt and garlic powder.
  2. Sauté the onions, scallions, tomato, and garlic in olive oil until soft for about 2 to 3 minutes.
  3. Add ¼ cup cilantro and stir for 1 minute.
  4. Add tomato sauce, water, Bouillon, and cumin, and stir to combine.
  5. Place the chicken in the sauce and top with corn.
  6. Cover and cook on high pressure for 20 minutes.
  7. Allow for natural release and top with remaining cilantro.
