Instructions
- Season the chicken with salt and garlic powder.
- Sauté the onions, scallions, tomato, and garlic in olive oil until soft for about 2 to 3 minutes.
- Add ¼ cup cilantro and stir for 1 minute.
- Add tomato sauce, water, Bouillon, and cumin, and stir to combine.
- Place the chicken in the sauce and top with corn.
- Cover and cook on high pressure for 20 minutes.
- Allow for natural release and top with remaining cilantro.
