Meatball and Mushroom Pasta

Ingredients

The meatballs

  • 2 lbs Lean Ground Beef
  • ½ cup Italian Breadcrumbs
  • 1 large Egg
  • ½ cup Condensed Cream of Mushroom Soup
  • 1 tbsp Slap Ya Mama Cajun Seasoning
  • 4 tbsp Minced Garlic
  • 1 tbsp Ground Cumin
  • 1 tsp Sea Salt
  • 1 tsp Organic Ground White Pepper
  • 2 tbsp Organic 2% Milk
  • 2 tbsp Worcestershire Sauce
  • 1 cup Chopped Onion
  • ½ cup Chopped Celery

The sauce

  • 3 tbsp Butter
  • 2 tbsp All Purpose Flour
  • 1 cup Chicken Stock
  • 1 tbsp Paprika
  • 2 cups Buttermilk
  • 3 cups White Cheddar Shredded Cheese

The pasta and mushrooms

  • 1 tbsp Olive Oil
  • 8 oz Organic White Sliced Mushrooms
  • 1 tbsp Black Truffle Oil
  • 16 oz Wide Egg Noodle Pasta
  • 8 oz Greek Yogurt Cream Cheese
  • 1 cup White Cheddar Shredded Cheese
  • 1 tbsp Parsley

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine the ground beef, breadcrumbs, egg, cream of mushroom soup, Cajun seasoning, 2 tbsp of minced garlic, cumin, salt, white pepper, milk, Worcestershire sauce, onion, and celery. Mix well.
  3. Form small meatballs and place them on a baking sheet.
  4. Bake the meatballs for 15 minutes until browned, then set aside.
  5. In a pan, melt butter over medium-low heat. Add flour and 2 tbsp of minced garlic, cooking for 1-2 minutes.
  6. Stir in chicken stock, paprika, and buttermilk until smooth, then add 3 cups of cheddar cheese and stir until melted.
  7. In another pan, heat olive oil and sauté the mushrooms for 5 minutes. Toss with black truffle oil and set aside some for topping.
  8. Cook the egg noodles according to package instructions, drain, and place in a large bowl.
  9. Add chunks of Greek yogurt cream cheese and cheese sauce to the noodles, folding to combine. Mix in ¾ of the meatballs and most of the mushrooms.
  10. Transfer the mixture to a baking dish, topping with remaining cheddar cheese, meatballs, and mushrooms.
  11. Bake for an additional 10 minutes at 375°F, then sprinkle with parsley before serving.
