Ingredients

The meatballs

  • 2 pounds ground beef (20% fat)
  • 1 cup Garlic Cauliflower Mashed Potatoes
  • 1 small yellow onion (finely minced)
  • ½ cup minced fresh basil
  • ¾ cup minced fresh Italian parsley (divided)
  • 4 cloves garlic (minced)
  • teaspoons Magic Mushroom Powder or Diamond Crystal kosher salt
  • 1 teaspoon dried oregano
  • ¼ teaspoon freshly ground black pepper

The sauce

  • 5 cups marinara sauce

For greasing

  • to taste avocado spray

Instructions

  1. Preheat the broiler and arrange the oven rack 6 inches from the heat source.
  2. Grease a rimmed baking sheet with avocado oil.
  3. In a large bowl, combine ground beef, mashed cauliflower, minced onion, basil, ½ cup parsley, minced garlic, Magic Mushroom Powder or salt, oregano, and black pepper.
  4. Gently mix the ingredients without overworking the meat.
  5. Cook a small spoonful of the mixture to check seasoning and adjust if necessary.
  6. Roll out 12 meatballs, each about 3 inches in diameter.
  7. Place the meatballs on the greased baking sheet, ensuring they are evenly spaced.
  8. Broil the meatballs for 8 to 10 minutes until browned on top.
  9. While the meatballs are broiling, bring the marinara sauce to a boil in a skillet, then reduce to a simmer.
  10. Transfer the browned meatballs to the simmering sauce, partially cover, and simmer for about 10 minutes until cooked through.
  11. Remove from heat and sprinkle with the remaining parsley before serving.
