Ingredients

Meatballs

  • 1 pound ground beef
  • 1 pound ground pork
  • 2 whole eggs
  • ¼ cup milk
  • 2 cloves garlic, minced
  • Tbsp Italian seasoning
  • tsp salt
  • ½ tsp black pepper
  • ¼ cup fresh parsley, chopped
  • cup Italian style breadcrumbs

Sunday Gravy

  • 2 Tbsp olive oil
  • 2 pounds short ribs
  • 2 pounds Italian sausage (spicy or sweet)
  • 1 medium yellow onion, diced
  • 2 whole carrots, grated
  • 6 cloves garlic, chopped
  • 1 cup red wine
  • 3 cans (28oz) Whole San Marzano Tomatoes with their juices, crushed by hand
  • 6 oz tomato paste
  • 3 cups water
  • 1 cup fresh basil leaves, packed
  • 1 sprig rosemary
  • 2 whole bay leaves
  • 1 Tbsp dried oregano
  • to taste salt
  • to taste pepper

Instructions

  1. 1. Prepare the meatballs by mixing eggs, milk, garlic, Italian seasoning, salt, pepper, and parsley in a bowl, then add breadcrumbs and ground meats, and form into meatballs.
  2. 2. Brown the short ribs, sausage, and meatballs in a pot with olive oil, removing each as they are browned.
  3. 3. Sauté onion and carrots in the same pot until softened, then add garlic and cook briefly.
  4. 4. Deglaze the pot with red wine, scraping up browned bits, and reduce the wine by half.
  5. 5. Add crushed tomatoes, tomato paste, water, basil, rosemary, bay leaves, oregano, salt, and pepper to the pot.
  6. 6. Add the browned short ribs to the sauce, cover, and simmer for 2 to 2.5 hours.
  7. 7. Add the sausages and cook uncovered for 1 hour, then add the meatballs and simmer for another hour, stirring occasionally.
