Orange Beef

Ingredients

The beef

  • 10 oz beef sirloin or flank steak, cut into bite-sized pieces
  • oil for deep-frying

The batter

  • ¼ cup all-purpose flour, sifted
  • 1 large egg
  • 2 tablespoon cornstarch
  • ½ teaspoon baking powder
  • ¼ cup ice cold water
  • ½ tablespoon cooking oil

The orange sauce

  • cup orange juice
  • 1 tablespoon soy sauce
  • 2 tablespoon sugar
  • 1 teaspoon apple cider vinegar or Chinese rice vinegar
  • 1 teaspoon cornstarch

The garnishes

  • 2 cloves garlic, minced
  • white sesame, for garnishing
  • scallion, chopped, for garnishing

Instructions

  1. Heat oil in a pot to 375°F (190°C).
  2. Mix all batter ingredients until smooth and coat beef pieces in the batter.
  3. Combine all ingredients for the orange sauce and set aside.
  4. Deep-fry the beef in batches until light brown, then remove and drain on paper towels.
  5. Dip the fried beef in the batter again and fry a second time until golden brown.
  6. In a skillet, heat oil and stir-fry garlic until fragrant, then add the orange sauce and cook until thick.
  7. Add the beef to the skillet, mix well, garnish with sesame seeds and scallions, and serve.
