Light Orange Beef and Broccoli

Ingredients

The sauce

  • 1 orange juice of
  • 1 tablespoon fresh orange zest
  • 2 tablespoons low sodium soy sauce
  • ¼ cup beef broth
  • cup orange marmalade
  • 2 tablespoons cornstarch
  • 1 teaspoon oil

The beef and broccoli

  • 1 lb. flank steak, very thinly sliced
  • 2 cloves garlic, minced
  • 1 head broccoli, washed and cut into bite-sized pieces

Instructions

  1. Mix the first 6 ingredients to dissolve the cornstarch.
  2. Boil the broccoli for a few minutes until tender-crisp, then drain.
  3. Heat oil in a skillet over high heat, add steak and garlic, and drain excess fat.
  4. Cook the steak until browned, then add the sauce and stir until thickened.
  5. Remove from heat and stir in the broccoli.
  6. Serve over rice, garnished with orange zest and/or scallions.
