Beef and Broccoli

Ingredients

The beef

  • 1 lb flank steak
  • 3 Tbsp soy sauce
  • 1 ½ Tbsp cornstarch
  • cup low-sodium chicken broth
  • 3 Tbsp honey
  • 1 ½ tsp rice vinegar
  • 1 tsp toasted sesame oil
  • 2 Tbsp vegetable oil
  • ½ cup chopped green onions
  • 1 Tbsp minced garlic
  • 2 tsp peeled and minced fresh ginger

The vegetables

  • 4 cups small broccoli florets
  • cup water

Optional toppings

  • to taste sesame seeds
  • to taste red pepper flakes

Instructions

  1. Slice the flank steak into strips and marinate with soy sauce and cornstarch for 15 minutes.
  2. Prepare the sauce by whisking together soy sauce, cornstarch, chicken broth, honey, rice vinegar, and sesame oil.
  3. Heat oil in a skillet and sear the steak pieces in batches until browned, then set aside.
  4. In the same skillet, sauté green onions, garlic, and ginger for 30 seconds.
  5. Add broccoli and water, cover, and steam until tender-crisp.
  6. Add the sauce mixture to the skillet and cook until thickened.
  7. Return the steak to the skillet, mix well, and serve warm over rice with optional toppings.
