Healthy Beef and Broccoli

Ingredients

The beef and broccoli

  • 12 oz broccoli
  • cup water
  • 2 tbsp avocado oil
  • ½ small onion, diced
  • 2 tbsp fresh grated ginger
  • 5 cloves garlic, minced
  • 1 lb flank steak, sliced into strips
  • optional rice to serve
  • optional sesame seeds

The sauce

  • ½ cup reduced sodium soy sauce
  • 2 tbsp honey
  • 1 tsp sesame oil
  • 1 tbsp arrowroot powder (or cornstarch)

Instructions

  1. Steam the broccoli with water in a large sauté pan or dutch oven for about 4 minutes until slightly tender but still crisp.
  2. Remove the broccoli and set it aside in a bowl.
  3. Whisk together the sauce ingredients in a bowl.
  4. Heat oil in the dutch oven over high heat, then add onions and cook for 2-3 minutes until softened.
  5. Add grated ginger, garlic, and sliced steak, cooking for another 2-3 minutes until the steak is no longer pink on the outside.
  6. Return the broccoli to the dutch oven and pour the sauce over everything.
  7. Mix well and cook over high heat for 4-6 minutes until the sauce thickens and bubbles, stirring occasionally.
  8. Remove from heat and serve, optionally over rice and topped with sesame seeds.
