Easy Beef and Broccoli

Ingredients

Velveting Mixture

  • 1 tablespoon rice cooking wine
  • 1 teaspoon soy sauce
  • 1 teaspoon tapioca starch
  • 12 ounces flank or skirt steak

Sauce

  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce
  • 2 tablespoons rice cooking wine
  • 1 teaspoon sugar
  • cup beef stock
  • 2 teaspoons tapioca starch

Other ingredients

  • ½ cup vegetable oil
  • 1 teaspoon fresh thinly sliced ginger
  • 2 cloves garlic
  • 2 tablespoons sliced scallions (white)
  • 1 tablespoon cracked black peppercorns
  • ¼ teaspoon red pepper flakes
  • 1 cup small broccoli florets
  • 2 tablespoons sliced scallions (green)

Instructions

  1. Combine all velveting mixture ingredients in a bowl and mix well.
  2. Add sliced beef to the mixture, mix well, and marinate for 20 minutes.
  3. Mix the sauce ingredients together in another bowl.
  4. Heat vegetable oil in a wok or large sauté pan over high heat until shimmering.
  5. Add the beef to the pan and quickly fry for 1-2 minutes until almost done.
  6. Remove the beef from the pan and let it drain on a wire grate.
  7. Pour out the oil from the pan, reserving 2 tablespoons, and rinse the pan with water.
  8. Return the pan to heat, add the reserved oil, and sauté ginger, garlic, and white scallions for about 45 seconds.
  9. Return the beef to the pan along with broccoli and peppercorns, and sauté for about 1 minute.
  10. Add the sauce mixture and cook for about 2 minutes until thickened.
  11. Serve and garnish with green scallions.
