Easy Beef and Broccoli

Instructions
- Combine all velveting mixture ingredients in a bowl and mix well.
- Add sliced beef to the mixture, mix well, and marinate for 20 minutes.
- Mix the sauce ingredients together in another bowl.
- Heat vegetable oil in a wok or large sauté pan over high heat until shimmering.
- Add the beef to the pan and quickly fry for 1-2 minutes until almost done.
- Remove the beef from the pan and let it drain on a wire grate.
- Pour out the oil from the pan, reserving 2 tablespoons, and rinse the pan with water.
- Return the pan to heat, add the reserved oil, and sauté ginger, garlic, and white scallions for about 45 seconds.
- Return the beef to the pan along with broccoli and peppercorns, and sauté for about 1 minute.
- Add the sauce mixture and cook for about 2 minutes until thickened.
- Serve and garnish with green scallions.
