Easy Almond Pulp Crackers

Ingredients

  • 1 scant cup wet almond pulp
  • 3 tablespoons olive or coconut oil
  • 1 tablespoon ground flax or chia seeds
  • ¼ teaspoon fine sea salt
  • 2 tablespoons fresh herbs or 2 teaspoons dried herbs
  • 1 clove garlic (optional)
  • as needed water water

Instructions

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the almond pulp, oil, ground flax or chia seeds, salt, herbs, and garlic, if using, and stir well.
  3. If the dough looks dry, add water one tablespoon at a time until it can be easily pressed together.
  4. Transfer the mixture to a sheet of parchment paper and place another sheet on top.
  5. Roll the cracker mixture to about 1/8-inch thick.
  6. Score the rolled dough into square shapes to make about 20 crackers.
  7. Poke the middle of each cracker with a fork.
  8. Place the parchment paper with the crackers on a baking sheet.
  9. Bake for 15 minutes, then flip each cracker and bake for an additional 15 to 20 minutes until crisp and golden.
  10. Cool completely before serving.
