Roasted Artichokes with Chorizo Dressing

Ingredients

  • 2 pounds baby artichokes
  • 1 lemon halved
  • 3 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • cup extra virgin olive oil
  • 6 cloves garlic
  • 2 sprigs fresh thyme leaves
  • 1 leaf bay leaf
  • 1 cup fresh sourdough bread crumbs
  • ¼ cup parsley
  • ¼ pound chorizo sausage
  • to taste kosher salt
  • to taste freshly ground pepper

Instructions

  1. Preheat the oven to 325°F.
  2. Prepare a bowl of water with lemon juice and slice the other half of the lemon.
  3. Strip the tough outer leaves from each artichoke and trim the bottom and tips.
  4. Cut the artichokes in half and remove the inner leaves and choke, rubbing cut edges with lemon.
  5. Combine lemon juice, quartered garlic, thyme, bay leaf, and olive oil in an oven-proof skillet.
  6. Add the artichokes, bring to a simmer, and cook for 2-3 minutes.
  7. Transfer the skillet to the oven and roast for about 40 minutes, stirring occasionally.
  8. In a separate skillet, heat olive oil and sauté minced garlic until fragrant.
  9. Add bread crumbs and toast until browned, then transfer to a bowl.
  10. In the same skillet, cook chorizo until done, then mix with bread crumbs, parsley, and lemon zest.
  11. Once artichokes are done, transfer to a serving dish, top with chorizo mixture, and drizzle with olive oil.
