Roasted Artichokes with Chorizo Dressing

Instructions
- Preheat the oven to 325°F.
- Prepare a bowl of water with lemon juice and slice the other half of the lemon.
- Strip the tough outer leaves from each artichoke and trim the bottom and tips.
- Cut the artichokes in half and remove the inner leaves and choke, rubbing cut edges with lemon.
- Combine lemon juice, quartered garlic, thyme, bay leaf, and olive oil in an oven-proof skillet.
- Add the artichokes, bring to a simmer, and cook for 2-3 minutes.
- Transfer the skillet to the oven and roast for about 40 minutes, stirring occasionally.
- In a separate skillet, heat olive oil and sauté minced garlic until fragrant.
- Add bread crumbs and toast until browned, then transfer to a bowl.
- In the same skillet, cook chorizo until done, then mix with bread crumbs, parsley, and lemon zest.
- Once artichokes are done, transfer to a serving dish, top with chorizo mixture, and drizzle with olive oil.
