Turkey Shepherd's Pie

Ingredients

Cauliflower Mash Topping

  • 2 medium heads cauliflower
  • 2 tbsp ghee or butter
  • 1 tsp salt
  • ½ tsp pepper

Pie Filling

  • 2 tbsp avocado oil
  • 1 large yellow onion, diced
  • 4 large carrots, chopped small
  • 8 oz mushrooms, roughly chopped
  • 2 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp pepper
  • 1 lb ground turkey
  • 1 cup broth (beef or chicken)
  • ¼ cup tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 cup frozen peas
  • 1 cup frozen corn

Instructions

  1. Preheat the oven to 400°F.
  2. Cut cauliflower into small florets and add to a large saucepan.
  3. Add 2 cups of water, cover with a lid, and cook until fork tender, about 10-15 minutes. Drain remaining water.
  4. Blend cauliflower with ghee, salt, and pepper in a food processor until smooth. Set aside.
  5. Heat avocado oil in a large saucepan, then add onions, carrots, and mushrooms. Sauté for 5-7 minutes until softened.
  6. Add garlic, rosemary, thyme, salt, and pepper, and stir to combine.
  7. Add ground turkey and cook until no longer pink.
  8. Stir in broth, tomato paste, and Worcestershire sauce, and let simmer for 5 minutes.
  9. Add peas and corn, stir, and turn off the heat.
  10. Pour the filling into a 9x13 baking dish and top with cauliflower mash. Bake for 20 minutes.
  11. Optionally, broil for an additional 5 minutes to brown the top.
