Instructions
- Preheat the oven to 400°F.
- Cut cauliflower into small florets and add to a large saucepan.
- Add 2 cups of water, cover with a lid, and cook until fork tender, about 10-15 minutes. Drain remaining water.
- Blend cauliflower with ghee, salt, and pepper in a food processor until smooth. Set aside.
- Heat avocado oil in a large saucepan, then add onions, carrots, and mushrooms. Sauté for 5-7 minutes until softened.
- Add garlic, rosemary, thyme, salt, and pepper, and stir to combine.
- Add ground turkey and cook until no longer pink.
- Stir in broth, tomato paste, and Worcestershire sauce, and let simmer for 5 minutes.
- Add peas and corn, stir, and turn off the heat.
- Pour the filling into a 9x13 baking dish and top with cauliflower mash. Bake for 20 minutes.
- Optionally, broil for an additional 5 minutes to brown the top.
