Ingredients

The filling

  • 1 ½ pounds ground lamb or beef
  • ½ cup diced onion
  • 1 medium carrot
  • 1 medium turnip
  • 1 teaspoon Better Than Bouillon Beef Base
  • 2 teaspoons Worcestershire Sauce
  • 1 tablespoon tomato paste
  • 1 tablespoon dried porcini powder (optional)
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon xanthan gum (optional)
  • 2 cups water or unsalted beef broth
  • ¼ cup chopped fresh parsley

The mashed cauliflower topping

  • 1 pound cauliflower florets
  • 2 ounces soft cream cheese
  • ¼ cup sour cream
  • 1 cup grated Gruyere Cheese (or white cheddar or Monterey Jack)
  • ½ cup sliced scallion tops
  • ¼ teaspoon salt
  • ¼ teaspoon white pepper

Instructions

  1. Prepare the vegetables by cutting the cauliflower, rolling and peeling the carrot, peeling and cubing the turnip, and dicing the onion.
  2. Combine the chopped scallion tops and parsley separately.
  3. In a cold skillet, cook the ground lamb, breaking it into small bits as it cooks.
  4. Add the vegetables, beef base, Worcestershire sauce, tomato paste, spices, and water or broth to the skillet, and bring to a simmer.
  5. Cover and simmer for 20 minutes until the carrots and turnips are tender, then reduce until the gravy thickens.
  6. Steam the cauliflower until tender, then process it with cream cheese, sour cream, salt, and pepper until smooth.
  7. Stir in the cheese and scallion tops into the mashed cauliflower.
  8. Spray a casserole dish with olive oil, layer the shepherd's pie filling, and top with the mashed cauliflower.
  9. Bake at 375°F for 40-50 minutes until bubbly, and brown under the broiler if desired.
