Instructions
- Preheat the oven to 400ºF.
- Boil the cauliflower florets until very tender, then drain well.
- In a pot, melt ½ Tbsp butter and brown the ground lamb or beef until no longer pink, then set aside.
- In the same pot, melt 1 Tbsp butter and sauté diced onion and carrot for 5 minutes, then add minced garlic.
- Return the meat to the pot, season, and add Worcestershire sauce, tomato paste, wine, rosemary, and thyme. Cook until the wine evaporates.
- Add chicken stock and peas, cooking for another 4 minutes.
- In another pot, melt 1 Tbsp butter, sauté minced garlic, then blend in the drained cauliflower, salt, pepper, egg yolks, and 1 cup of cheese.
- Spread the cauliflower mash over the meat filling in a baking dish, seal the edges, and sprinkle with remaining cheese.
- Bake for 20 minutes, then broil on high for 5 minutes for a golden top.
- Let sit for 5-10 minutes before serving.
