Cheesy Cauliflower Shepherd's Pie

Ingredients

Cheesy Cauliflower Mash

  • 1 medium head cauliflower
  • 1 Tbsp butter or ghee
  • 2 cloves garlic
  • ½ tsp fine sea salt
  • ¼ tsp freshly ground black pepper
  • 2 egg yolks egg yolks
  • 5 oz Kerrygold Dubliner Cheese

Meat Filling

  • 1.5 Tbsp butter or ghee
  • 1 lb ground lamb or beef
  • 1 large carrot
  • 1 medium onion
  • 4 cloves garlic
  • 1 tsp fine sea salt
  • ½ tsp freshly ground black pepper
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp tomato paste
  • ½ cup dry red wine
  • 1 Tbsp finely chopped rosemary
  • 1 tsp finely chopped thyme
  • ½ cup chicken stock or broth
  • ½ cup peas

Instructions

  1. Preheat the oven to 400ºF.
  2. Boil the cauliflower florets until very tender, then drain well.
  3. In a pot, melt ½ Tbsp butter and brown the ground lamb or beef until no longer pink, then set aside.
  4. In the same pot, melt 1 Tbsp butter and sauté diced onion and carrot for 5 minutes, then add minced garlic.
  5. Return the meat to the pot, season, and add Worcestershire sauce, tomato paste, wine, rosemary, and thyme. Cook until the wine evaporates.
  6. Add chicken stock and peas, cooking for another 4 minutes.
  7. In another pot, melt 1 Tbsp butter, sauté minced garlic, then blend in the drained cauliflower, salt, pepper, egg yolks, and 1 cup of cheese.
  8. Spread the cauliflower mash over the meat filling in a baking dish, seal the edges, and sprinkle with remaining cheese.
  9. Bake for 20 minutes, then broil on high for 5 minutes for a golden top.
  10. Let sit for 5-10 minutes before serving.
