Chickpea Vegan Sausage Crumbles

Ingredients

  • 2 cans chickpeas (15 ounces each)
  • 2 tablespoons fennel seeds, crushed
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 teaspoon lemon pepper
  • 1 teaspoon garlic powder
  • 1-2 teaspoons Himalayan pink salt
  • 1-2 teaspoons crushed red pepper (optional)
  • 1 tablespoon oat flour

Instructions

  1. Rinse and dry the chickpeas thoroughly, removing as many outer skins as possible.
  2. Place dried chickpeas in a bowl and add all the spices except for the oat flour.
  3. Use a potato masher or your hands to crumble the chickpeas into small pieces, avoiding a mash.
  4. Add the oat flour to the bowl and mix well to coat the crumbles.
  5. Spread the mixture onto a parchment-lined cookie sheet in an even layer.
  6. Bake at 375°F (180°C) for 20 minutes until the outside is beginning to get crispy.
  7. Sprinkle over your favorite dishes.
