Instructions
- Sauté mushrooms, onion, and garlic in oil or veggie broth until soft.
- Add basil, oregano, thyme, fennel, red pepper, smoked paprika, black pepper, and soy sauce; cook until no liquid remains.
- Cool the mixture.
- Blend oats and walnuts in a food processor until crumbled.
- Combine the sautéed mixture and lentils in the processor; pulse to a crumbled dough consistency.
- Let the mixture set for 5-10 minutes.
- Shape into 8 sausage links.
- Cook by either pan-frying or steaming wrapped in parchment and foil.
- If pan-frying, rotate every 3-4 minutes until browned.
- If steaming, steam for 45-60 minutes for firmer texture.
