Ingredients

  • 2 cups chopped mushrooms
  • ¾ cup chopped yellow or sweet onion
  • 2 cloves garlic
  • 1-2 teaspoons crushed red pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon fennel seeds
  • ½ teaspoon ground black pepper
  • 1 teaspoon smoked paprika (optional)
  • ¼ cup tamari (or soy sauce)
  • 1 cup gluten-free oats
  • ¾ cup walnuts
  • cups precooked lentils
  • ¼ teaspoon sea salt (optional)

Instructions

  1. Sauté mushrooms, onion, and garlic in oil or veggie broth until soft.
  2. Add basil, oregano, thyme, fennel, red pepper, smoked paprika, black pepper, and soy sauce; cook until no liquid remains.
  3. Cool the mixture.
  4. Blend oats and walnuts in a food processor until crumbled.
  5. Combine the sautéed mixture and lentils in the processor; pulse to a crumbled dough consistency.
  6. Let the mixture set for 5-10 minutes.
  7. Shape into 8 sausage links.
  8. Cook by either pan-frying or steaming wrapped in parchment and foil.
  9. If pan-frying, rotate every 3-4 minutes until browned.
  10. If steaming, steam for 45-60 minutes for firmer texture.
