Cherry Pie Filling

Ingredients

  • 10 cups tart or sweet cherries, pitted and stemmed
  • 1 ¼ cups granulated sugar, divided
  • 3 tablespoons cornstarch
  • a pinch salt
  • ½ cup water or juice (cherry or apple)
  • 2 tablespoons lemon juice
  • ½ teaspoon pure almond extract
  • ¼ teaspoon red food coloring (optional)

Instructions

  1. Sprinkle pitted cherries with ½ cup of sugar and let stand for 15-20 minutes.
  2. In a large pan, whisk together the remaining sugar, cornstarch, and salt, then add lemon juice and water or juice and whisk until smooth.
  3. Add cherries and their juices to the pan, stirring well.
  4. Heat the mixture over medium heat until it simmers, then increase to medium-high and cook, stirring constantly until it reaches a rolling boil.
  5. Once boiling, set a timer for 3 minutes while continuing to stir.
  6. Remove from heat and stir in almond extract and red food coloring if using.
  7. Transfer to jars or a container with a tight-fitting lid and allow to cool before refrigerating.
