Paleo Sriracha

Ingredients

  • pounds fresh red jalapeño or Fresno peppers
  • 8 cloves garlic
  • cup apple cider vinegar
  • 3 tablespoons tomato paste
  • 3 tablespoons honey
  • 2 tablespoons Red Boat fish sauce
  • teaspoons Diamond Crystal kosher salt

Instructions

  1. Prep the peppers by removing seeds and ribs for moderate heat.
  2. Blend all ingredients in a high-speed blender or food processor until smooth.
  3. Pour the mixture into a saucepan and bring to a boil over high heat.
  4. Reduce heat to low and simmer for 5 to 10 minutes, stirring occasionally.
  5. Taste and adjust seasoning if necessary.
  6. Transfer the sriracha to jars and allow to cool before storing.
