Instructions
- Preheat the oven to 375°F and line a baking tray with parchment paper.
- In a medium bowl, mash the banana and then mix in the milk, maple syrup, and apple cider vinegar.
- In a large bowl, whisk together the oat flour, cornstarch, brown sugar, baking powder, cinnamon, and salt.
- Cut the walnut butter into the dry ingredients until it resembles small sand-like pieces.
- Add the banana mixture to the dry ingredients and stir to combine.
- Fold in the chopped walnuts.
- Shape the dough into a circle about 7 inches across and ¾ inch thick on the prepared tray.
- Cut the dough into 8 equal triangles and spread them out on the tray.
- Bake for 7-10 minutes until firm to the touch.
- Allow the scones to cool slightly on the tray before transferring them to a wire rack.
- For the glaze, whisk together the powdered peanut butter, powdered sugar, salt, and maple syrup, adding water until desired consistency is reached.
- Dip the cooled scones in the glaze or drizzle it on top.
