Ingredients

The scone mixture

  • ¼ cup real, good quality maple syrup
  • 6 tablespoons milk or cream
  • 2 ¼ cups whole wheat pastry flour
  • ½ cup quinoa flakes or rolled oats
  • 1 ½ tablespoons baking powder
  • ½ teaspoon fine grain sea salt
  • 11 tablespoons unsalted butter, cold, cut into cubes
  • 1 large egg, lightly beaten

For topping

  • to taste large-grain sugar (e.g., turbinado)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a small cup, whisk together the maple syrup and milk, then set aside.
  3. In a bowl, combine the flour, quinoa or oats, baking powder, and salt.
  4. Cut the cold butter into the flour mixture using a food processor or by hand until it resembles small pebbles.
  5. Add the maple syrup mixture to the flour and mix until just combined, adding more cream if the dough is too dry.
  6. Turn the dough onto a floured surface and knead gently to bring it together.
  7. Shape the dough into a 1-inch thick rectangle, trim the edges, and cut into nine equal squares.
  8. Arrange the scones on the baking sheet, brush with egg wash, and sprinkle with large-grain sugar.
  9. Bake for 20-25 minutes until golden on the bottom and tops.
