Simple Tomato + Burrata Salad

Ingredients

  • 1 cup torn bread
  • 2 tsp extra virgin olive oil
  • ½ tsp sea salt
  • lbs heirloom tomatoes
  • 2 cups soft lettuce of choice
  • ½ cup fresh basil leaves
  • 1 medium shallot
  • 8 oz burrata cheese
  • to taste good quality extra virgin olive oil
  • to taste balsamic vinegar

Instructions

  1. Preheat the oven to 400°F.
  2. Spread the torn bread on a baking tray, drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
  3. Bake for about 10 minutes until the edges are crisp and brown, then set aside.
  4. Slice the tomatoes into ¼-inch slices and arrange them on a serving tray in concentric circles.
  5. Sprinkle the tomatoes with sea salt, fresh ground pepper, and chopped shallots.
  6. Chop the soft greens and basil together, toss with olive oil and balsamic vinegar, and mound in the center of the tomatoes.
  7. Distribute the croutons on top and place the burrata in the center, breaking open the creamy center if desired.
  8. Drizzle the burrata with extra virgin olive oil and balsamic vinegar to taste, finishing with a sprinkle of salt and fresh ground pepper.
