Instructions
- Preheat the oven to 350°F and prepare a muffin tin.
- In a large bowl, mix the dry ingredients: flour, sucanat, baking powder, baking soda, cinnamon, and sea salt.
- In a separate bowl, whisk together the wet ingredients: canola oil, coconut oil, almond milk, and molasses.
- Combine the wet and dry ingredients and mix well.
- Divide the batter among the cupcake tins and place a marshmallow in the center of each.
- Bake for approximately 22-25 minutes, then cool for at least 10 minutes.
- Prepare the chocolate ganache by heating almond milk, then mixing in chocolate chips and maple syrup until smooth.
- Pour the ganache over the cooled cupcakes and garnish as desired.
