Vegan S'mores Brownie

Ingredients

The brownie

  • ½ cup unsalted butter
  • 1 cup organic brown sugar
  • 1 cup vegan dark chocolate chips
  • 2 units egg replacements (or 2 Flax Eggs)
  • 2 tsp vanilla extract
  • ½ cup almond meal
  • ½ cup unbleached white organic all-purpose flour
  • 5 tbsp cocoa powder
  • ½ tsp salt

The toppings

  • ¾ cup vegan graham crackers (roughly crushed)
  • ¾ cup vegan marshmallow

Instructions

  1. Preheat the oven to 350°F and prepare a 9"x9" glass pan with coconut oil and parchment paper.
  2. Melt the butter in a pot on low heat, then stir in the sugar until well combined.
  3. Remove from heat and add the chocolate, stirring until melted.
  4. Let the mixture cool, then add the egg replacement.
  5. In a separate bowl, mix the dry ingredients, then combine with the wet mixture until just mixed.
  6. Pour the batter into the prepared pan and bake for 20 minutes.
  7. Remove from the oven and top with graham crackers and marshmallows, then bake for an additional 20 minutes.
  8. Let the brownies cool for 15 minutes before cutting.
