Vegan S'mores Bark

Instructions
- Line a half sheet pan with parchment paper and set aside.
- Melt the vegan butter in a saucepan over medium-high heat, then add coconut palm sugar and salt, stirring until dissolved and foamy.
- Bring the mixture to a boil and cook for 2-3 minutes until it thickens.
- Remove from heat and stir in the crushed graham crackers until evenly coated.
- Spread the caramelized graham crackers on a smaller parchment-lined baking sheet and chill until firm.
- Melt the chocolate in a double boiler and spread it on the parchment-lined half sheet pan.
- Top the melted chocolate with the caramelized graham crackers and vegan marshmallows, adding salt if desired.
- Refrigerate until completely firm, about 1 hour, then break into pieces.
