Vegan S'mores Bark

Ingredients

  • ¼ cup vegan butter
  • ¼ cup coconut palm sugar
  • pinch fine sea salt
  • ¾ cup coarsely crushed graham crackers
  • 12 oz dairy-free chocolate, chopped
  • ½ cup small vegan marshmallows

Instructions

  1. Line a half sheet pan with parchment paper and set aside.
  2. Melt the vegan butter in a saucepan over medium-high heat, then add coconut palm sugar and salt, stirring until dissolved and foamy.
  3. Bring the mixture to a boil and cook for 2-3 minutes until it thickens.
  4. Remove from heat and stir in the crushed graham crackers until evenly coated.
  5. Spread the caramelized graham crackers on a smaller parchment-lined baking sheet and chill until firm.
  6. Melt the chocolate in a double boiler and spread it on the parchment-lined half sheet pan.
  7. Top the melted chocolate with the caramelized graham crackers and vegan marshmallows, adding salt if desired.
  8. Refrigerate until completely firm, about 1 hour, then break into pieces.
