Ingredients

The cookie base

  • 1 Tbsp flaxseed meal
  • 2 ½ Tbsp water
  • ¾ cup coconut sugar
  • ½ cup softened vegan butter
  • 1 ¼ cup all-purpose flour (or gluten-free blend)
  • 1 tsp baking powder
  • ½ tsp sea salt

The mix-ins

  • cup semi-sweet chocolate chips
  • ½ cup mini vegan marshmallows (plus more for topping)

Instructions

  1. Preheat the oven to 350°F (176°C) and line two baking sheets with parchment paper.
  2. In a medium mixing bowl, combine flaxseed meal and water and let sit for 5 minutes to form a gel.
  3. Add coconut sugar and vegan butter to the flax mixture and beat until light and fluffy.
  4. Mix in the flour, baking powder, and sea salt until fully incorporated.
  5. Fold in chocolate chips and mini marshmallows.
  6. Scoop the dough onto the baking sheets, placing them 2 inches apart, and top each with extra marshmallows.
  7. Bake for 10-12 minutes until edges are golden brown and marshmallows are lightly browned.
  8. Allow to cool on the baking sheet for 5-10 minutes before transferring to a wire rack.
