Instructions
- Preheat the oven to 350°F (176°C) and line two baking sheets with parchment paper.
- In a medium mixing bowl, combine flaxseed meal and water and let sit for 5 minutes to form a gel.
- Add coconut sugar and vegan butter to the flax mixture and beat until light and fluffy.
- Mix in the flour, baking powder, and sea salt until fully incorporated.
- Fold in chocolate chips and mini marshmallows.
- Scoop the dough onto the baking sheets, placing them 2 inches apart, and top each with extra marshmallows.
- Bake for 10-12 minutes until edges are golden brown and marshmallows are lightly browned.
- Allow to cool on the baking sheet for 5-10 minutes before transferring to a wire rack.
