Ingredients

  • 2 cups gluten-free flour with xanthum gum
  • 1 tsp arrowroot powder
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 stick grass-fed butter, cubed
  • cup light brown sugar, packed
  • cup white granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup dairy-free chocolate chips
  • ¾ cup gluten-free graham cracker pieces
  • ½ cup mini marshmallows
  • ½ bar Hu Kitchen Salty Chocolate Bar, cut into chunks

Instructions

  1. Preheat the oven to 375°F.
  2. Mix together the flour, arrowroot, baking soda, baking powder, and salt in a large bowl.
  3. In another bowl, cream the cubed cold butter for 30 seconds to 1 minute.
  4. Add both sugars and mix for an additional minute, then add the eggs and vanilla extract.
  5. Gradually add the flour mixture while mixing on low speed.
  6. Fold in the chocolate chips, graham cracker pieces, and marshmallows.
  7. Scoop out 12 cookies and place them on an ungreased baking sheet.
  8. Top each cookie with chopped chocolate, graham cracker pieces, and marshmallows.
  9. Bake for 10-12 minutes until slightly golden brown.
  10. Let rest for at least 15 minutes before transferring to a cooling rack.
