Ingredients

The cookie dough

  • ½ cup vegan butter
  • 1 cup brown sugar
  • 3 tablespoons vegan milk
  • 1 teaspoon vanilla extract
  • 1 ¾ cups flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • ¾ teaspoon sea salt

The mix-ins

  • 2 ounces chopped vegan chocolate chunks
  • ½ cup chocolate chips
  • ½ cup graham crackers
  • 7 large vegan marshmallows

Instructions

  1. Cream the vegan butter and brown sugar together for 3 minutes.
  2. Add the vegan milk and vanilla extract, mixing for an additional 30 seconds.
  3. Incorporate the flour, cornstarch, baking soda, and sea salt into the wet ingredients until just combined.
  4. Fold in the chopped chocolate, chocolate chips, and graham crackers.
  5. Chill the dough in the refrigerator for 1 ½ hours.
  6. Scoop out ¼ cup of dough for each cookie, pressing down and adding half a marshmallow in the center.
  7. Form the dough around the marshmallow and space the cookies 3 inches apart on a baking sheet.
  8. Bake at 350°F for 15 minutes.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
