Healthy S'mores Brownies

Ingredients

The brownie batter

  • 3 large eggs
  • ¾ cup coconut sugar
  • ½ cup melted coconut oil
  • ¼ cup almond butter
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • ½ cup cocoa powder
  • ¼ tsp baking soda
  • ¼ tsp salt

The crust and topping

  • 6 pieces graham crackers
  • 24 pieces marshmallows

Instructions

  1. Preheat the oven to 350°F and line a 9x9 baking pan with parchment paper and nonstick spray.
  2. In a large bowl, whisk together the eggs, coconut sugar, melted coconut oil, almond butter, and vanilla extract.
  3. In a separate small bowl, mix the almond flour, cocoa powder, baking soda, and salt.
  4. Combine the dry ingredients with the wet ingredients and stir until well mixed; the batter should be thick.
  5. Place the graham crackers evenly in the bottom of the prepared baking dish, breaking them as needed to create a flat layer.
  6. Pour the brownie batter over the graham crackers, spreading it evenly, and then add the marshmallows on top in rows.
  7. Bake for 34-36 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool for at least 10 minutes before serving.
