S'mores Brownies

Ingredients

The brownie base

  • ½ cup coconut oil
  • 2 large eggs
  • cup dark chocolate chips
  • ¾ cup coconut sugar
  • ½ tsp Himalayan salt
  • 3 tbsp arrowroot starch
  • cup cocoa powder
  • 2 tsp vanilla extract
  • 1 tsp cinnamon

The toppings

  • 8 pieces shortbread cookies
  • 16 pieces marshmallows

Instructions

  1. Preheat the Green Mountain Grill to 350 degrees.
  2. Melt the coconut oil and chocolate chips in a small pot over medium heat and combine with the other ingredients in a bowl.
  3. Coat the cast iron skillets with coconut oil and pour in the batter.
  4. Bake for 20 minutes, then add 2 marshmallows per skillet and bake for an additional 5 minutes.
  5. Let the brownies cool before serving, optionally with ice cream.
