No-Bake Strawberry Cream Pie

Ingredients

The crust

  • 1 pie crust vegan pie crust, baked and completely cooled

The filling

  • 8 ounces vegan cream cheese, softened
  • 1 teaspoon vanilla extract
  • cup powdered sugar
  • 1 cup vegan whipped cream
  • 16 ounces fresh strawberries
  • ¼ cup vegan strawberry jam

Instructions

  1. Beat the vegan cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Mash 1 cup of strawberries into a chunky jam-like mixture and fold into the cream cheese mixture along with the vegan whipped cream.
  3. Pour the strawberry cream filling into the cooled pie crust.
  4. Spread the strawberry jam in an even layer on top of the filling.
  5. Cut the remaining strawberries and place them on top of the jam layer.
  6. Add more whipped cream on top if desired.
  7. Refrigerate for 4 hours or overnight before serving.
