Instructions
- Preheat the oven to 350°F (177°C).
- Crush pretzels and graham crackers, then mix with sugar and melted butter to form the crust.
- Press the mixture into a 9-inch pie dish and bake for 15-16 minutes. Let it cool.
- Puree the strawberries and strain to remove seeds, then reduce the puree over low-medium heat until you have about ½ cup.
- Whip the cold heavy cream into stiff peaks and set aside.
- Beat the cream cheese until smooth, then add the cooled reduced strawberry puree, confectioners’ sugar, and vanilla extract.
- Fold the whipped cream into the cream cheese mixture until combined.
- Spread the filling into the cooled crust and refrigerate for at least 8 hours.
- Prepare toppings by mixing sliced strawberries with sugar and whipping cream with sugar and vanilla until medium peaks form.
- Top the pie with strawberries and whipped cream before serving.
