Ingredients

Pretzel Graham Cracker Crust

  • ½ cup crushed pretzel crumbs
  • 1 cup graham cracker crumbs
  • 3 Tablespoons granulated sugar
  • 5 Tablespoons unsalted butter, melted

Strawberry Filling

  • 1.5 lbs. strawberries, rinsed & hulled
  • 1 cup cold heavy cream
  • 16 ounces full-fat brick cream cheese, softened
  • 1 cup confectioners’ sugar
  • 1 teaspoon pure vanilla extract

Toppings

  • 1 cup sliced strawberries
  • 2 Tablespoons granulated sugar
  • 1 cup cold heavy cream
  • ½ teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Crush pretzels and graham crackers, then mix with sugar and melted butter to form the crust.
  3. Press the mixture into a 9-inch pie dish and bake for 15-16 minutes. Let it cool.
  4. Puree the strawberries and strain to remove seeds, then reduce the puree over low-medium heat until you have about ½ cup.
  5. Whip the cold heavy cream into stiff peaks and set aside.
  6. Beat the cream cheese until smooth, then add the cooled reduced strawberry puree, confectioners’ sugar, and vanilla extract.
  7. Fold the whipped cream into the cream cheese mixture until combined.
  8. Spread the filling into the cooled crust and refrigerate for at least 8 hours.
  9. Prepare toppings by mixing sliced strawberries with sugar and whipping cream with sugar and vanilla until medium peaks form.
  10. Top the pie with strawberries and whipped cream before serving.
