Ingredients

The batter

  • cup King Arthur Paleo Flour
  • ½ cup coconut sugar
  • ½ tsp baking soda
  • ¼ tsp salt
  • tsp pumpkin pie spice
  • ¼ cup coconut oil, melted
  • ½ cup pumpkin puree
  • ¼ cup pure maple syrup
  • 1 whole large egg, whisked
  • tsp pure vanilla extract

The toppings

  • 1 cup chocolate chips, divided

Instructions

  1. Preheat the oven to 350°F and grease a 9x9-inch baking pan.
  2. In a large bowl, combine all ingredients except for the chocolate chips.
  3. Gently fold in ¾ cup of the chocolate chips.
  4. Transfer the dough to the prepared baking pan and spread it evenly.
  5. Top with the remaining chocolate chips.
  6. Bake for 17-20 minutes or until the center is firm to touch.
  7. Allow to cool completely before slicing into 16 squares.
