Ingredients

The base

  • 1.75 pounds frozen tater tots or frozen hash brown patties
  • 5 large eggs
  • 1.75 cups whole milk
  • ¾ cup finely diced peppers and onions
  • 1.5 cups shredded cheddar cheese

Seasonings

  • 1 teaspoon onion powder
  • ½ teaspoon ground pepper
  • teaspoon salt

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together eggs, milk, peppers, onions, onion powder, pepper, and salt.
  3. Spread 1 cup of shredded cheese on the bottom of a baking pan.
  4. Pour the egg mixture into the dish.
  5. Layer with tater tots, covering with foil if not baking immediately.
  6. Bake for 35 minutes, then top with ½ cup shredded cheese.
  7. Bake for an additional 20-25 minutes until the top is golden brown.
  8. Remove from the oven and serve.
