Onigiri (Rice Balls)

Ingredients

The rice

  • ½ cup rice (uncooked)

The fillings

  • 1 piece seeded umeboshi pickled plum
  • 2 tbsp bonito flakes
  • ½ tsp soy sauce
  • ½ tsp mirin
  • 95 g tinned tuna
  • ½ tbsp Japanese mayonnaise
  • 1 piece Salted salmon

The wrapping

  • 1 sheet nori (seaweed)

Instructions

  1. Cook the rice according to your preferred method.
  2. Transfer the cooked rice to a bowl to cool down.
  3. Prepare the fillings: deseed the umeboshi and divide it, mix bonito flakes with soy sauce and mirin, and mix drained tuna with mayonnaise.
  4. Place plastic wrap over a bowl, add ⅙ of the cooled rice, and make a well in the center.
  5. Add about 1 tsp of the chosen filling into the well, then cover with more rice and mold it into a triangle shape using the plastic wrap.
  6. Remove the plastic wrap and wrap the bottom of the rice triangle with a nori sheet.
  7. Repeat the process with the remaining rice and fillings.
