Roasted Jalapeño Vegan Queso

Ingredients

  • cups raw cashews
  • 1-2 small jalapeños
  • ⅓-½ cup nutritional yeast
  • ½-1 cup filtered water
  • ½ tsp chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp sea salt
  • 1 dash hot sauce (optional)

Instructions

  1. Soak cashews in cool water overnight or in hot water for 1 hour, then drain.
  2. Preheat the oven to medium broil and place jalapeños on a baking sheet.
  3. Broil the jalapeños for 4-7 minutes until slightly blackened, then wrap in foil to steam for a few minutes.
  4. Peel the skin off the jalapeños and remove seeds and stems.
  5. In a blender, combine soaked cashews, jalapeños, nutritional yeast, water, chili powder, cumin, garlic powder, salt, and hot sauce.
  6. Blend until creamy, adding more water if needed.
  7. Taste and adjust seasoning as necessary.
  8. Serve immediately or store in the refrigerator for up to 5 days.
