Ingredients

The cheese sauce

  • 1 cup raw cashews
  • 2 tbsp olive oil
  • cup almond milk
  • ¼ cup nutritional yeast
  • ½ tsp salt
  • 2 tbsp cornstarch
  • ½ tsp smoked paprika
  • ¼ cup sundried tomatoes
  • a few slices green jalapeno

For serving

  • 2 cups tortilla chips

Instructions

  1. Soak cashews in boiled water for 1 hour or overnight in room temperature water.
  2. Drain the soaked cashews and place them in a food processor with 1 cup almond milk, nutritional yeast, salt, smoked paprika, and sundried tomatoes.
  3. Blend the mixture until smooth and set aside.
  4. In a non-stick saucepan, combine olive oil and cornstarch, then add the cashew mixture.
  5. Cook the queso over medium heat, stirring continuously until smooth.
  6. Serve warm, garnished with jalapeno slices and tortilla chips.
