For serving
Instructions
- Soak cashews in boiled water for 1 hour or overnight in room temperature water.
- Drain the soaked cashews and place them in a food processor with 1 cup almond milk, nutritional yeast, salt, smoked paprika, and sundried tomatoes.
- Blend the mixture until smooth and set aside.
- In a non-stick saucepan, combine olive oil and cornstarch, then add the cashew mixture.
- Cook the queso over medium heat, stirring continuously until smooth.
- Serve warm, garnished with jalapeno slices and tortilla chips.
