Ingredients

  • 1 cup raw cashews
  • 6 tablespoons water
  • 1 teaspoon sea salt
  • tablespoons fresh lemon juice
  • 3 tablespoons nutritional yeast
  • ½ teaspoon turmeric
  • 1 can (14.5 oz) diced tomatoes with green chilies

Instructions

  1. Soak the cashews in hot water for about 15 minutes to soften them.
  2. In a blender, combine the lemon juice, nutritional yeast, turmeric, and salt.
  3. Drain the juices from the can of diced tomatoes and add them to the blender.
  4. Add the soaked cashews and their soaking water to the blender and blend until smooth.
  5. Transfer the mixture to a bowl and stir in the diced tomatoes with green chilies.
  6. Adjust the flavors to taste, then warm the dip in a crockpot or on the stovetop before serving.
